Its called Hearty Beef Stew for a reason. Packed with powerful flavours of orange and cinnamon to bring out the beautiful taste of the slow cooked beef, we can't go past this one-pot wonder. Ease of cooking is at the core of this dish as the oven or slow cooker does all the hard work. Serve on-top rice, pasta or mashed potato with a serving of seasonal greens. Freeze leftovers or enjoy for lunch the following day.

Ingredients

750g Quality Mark beef chuck steak

2 Tbsp olive oil

3 onions

finely diced

4 garlic cloves

crushed and chopped

Juice and zest of 1 orange

2 carrots

grated

2 Tbsp honey

2 Tbsp tomato paste

4 cups Campbell’s Real Beef Stock

arrow

15cm sprig fresh rosemary

finely chopped

1/3 cup parsley

chopped

2 tsp ground cinnamon

arrow

1 cup brown lentils

use dried rather than canned

To serve

Pre heat oven to 150C fan bake.

Heat the oil in a cast iron casserole over a medium-high heat and brown the beef. Lift the beef from the casserole and set aside. Add the onion to the casserole and gently cook for 5 minutes until softened.

Remove from heat and add all the remaining ingredients including the beef. Stir well to combine and cover.

Place in the oven and cook for 3 ½ - 4 hours until the meat is tender and falling apart.

Garnish with strips of orange rind and fresh parsley leaves.

We like to serve on-top of potato or kumara mash, but would go well with pasta or rice too.

For a pop of green, serve with your favourite seasonal greens.
