Hearty Beef, Orange & Lentil Stew

Its called Hearty Beef Stew for a reason. Packed with powerful flavours of orange and cinnamon to bring out the beautiful taste of the slow cooked beef, we can't go past this one-pot wonder. Ease of cooking is at the core of this dish as the oven or slow cooker does all the hard work. Serve on-top rice, pasta or mashed potato with a serving of seasonal greens. Freeze leftovers or enjoy for lunch the following day.

  • 750g beef chuck steak, cut into 5cm pieces
  • 2 tbsp olive oil
  • 4 cloves garlic, crushed
  • Juice & rind on 1 orange
  • Juice of 1 lemon
  • 3 onions, finely diced
  • 2 carrots, grated
  • 2 tbsp honey
  • 2 tbsp tomato paste
  • 4 cups beef stock
  • handful fresh rosemary
  • handful fresh parsley
  • 2 tsp cinnamon
  • 1 400g can lentils

Method

Pre heat oven to 150C fan bake.

Bring stove top to medium-high, using an oven proof crock pot heat oil and saute onion. When onions start to soften add the beef and brown. Remove from heat and add all the remaining ingredients. Stir well to combine and cover. Place in the oven and cook for 4-6 hours until the meat is tender and falling apart. 

Garnish with strips of orange rind and fresh parsley leaves. We like to serve on-top of potato or kumara mash, but would go well with pasta or rice too. For a pop of green serve with your favourite seasonal greens. 

Slow cooker method: This dish can also be made in the slow cooker as per the method above. Ensure you soften the onions and brown the meat first. Cook on high for 4 hours, or low for 6-8 hours.

  • Look for beef with a marbling of fat and connective tissue as this adds flavour and tenderness to the beef.

This is wonderful ! Def a keeper recipe. I kept the chunks of Beef Chuck Steak large, and only used 2 cups of beef stock as I was using my slow cooker...also threw in a quince and a couple of tart feijoa... tender, very tasty and the perfect hearty thick stew !
