Marinade

2 Tbsp fish sauce

2 Tbsp garlic paste

2 Tbsp ginger paste

2 Tbsp sweet chili sauce

2 Tbsp fresh mint

Vegetables for stir-fry

4cm knob fresh ginger

grated

1 large red chilli

deseeded, cut into thin strips

2-3 heads baby bok choy

halved

250g shiitake mushrooms

arrow

125g snow peas

arrow

1 bunch spring onion

sliced

Dressing

4 Tbsp lemon juice

arrow

2 Tbsp fish sauce

1 Tbsp brown sugar

1/4 cup mint leaves

arrow

1/4 cup fresh coriander leaves

In a resealable plastic bag toss the marinade ingredients with the fillet steak.

Seal and leave to marinate for 30 minutes.
