Ingredients
Raw Energy Salad
1 cup quinoa
cooked to package instructions
1/4 cup pumpkin seeds
1/4 cup sunflower seeds
1 tsp cumin seeds
1/4 red cabbage
finely shredded
1 red capsicum
diced
1 celery stalk
finely sliced
1 carrot
grated
1/2 red onions
finely sliced
1 beetroot
grated
2 handfuls fresh mint
chopped
2 tsp pomegranate molasses
or pomegranate seeds
1/2 oranges
juice and finely grated rind
3 Tbsp olive oil
1 tsp salt
1 tsp ground black pepper
Method
For Raw Energy Salad

Rinse the quinoa and then cook according to packet instructions, drain and then set aside.

Combine the pumpkin seeds, sunflower seeds and cumin seeds and lightly toast in a frying pan over medium heat, stirring continuously.

In a large bowl toss together the cabbage, capsicum, celery, carrot, onion, beetroot, seeds and quinoa.

Combine the mint, pomegranate molasses, orange rind and juice, 3 tablespoons of olive oil and salt and freshly ground black pepper together in a small bowl. Drizzle the dressing over the salad and serve.
