Ingredients

500g pulled beef

1 can sweet corn

1 cup white flour

3 eggs

2 Tbsp butter

melted

1 tsp salt

1 tsp black pepper

1 tsp baking soda

1 red onion

finely chopped

50g fresh coriander

chopped

Crack the eggs into a mixing bowl and beat for 1-2 mins.

Add corn, pulled beef, salt and pepper and mix for a further 1-2 minutes.

Add the remaining ingredients and mix well until they start to form a thick batter like consistency.

Heat a fry pan on a medium heat with a generous amount of cooking oil.

Cook for 4-5 minutes per side or until a nice golden crust has formed on each side.
