Zucchinis are a wonderful seasonal vegetable to serve during Christmas or a summer get-together. When grilled in thick slices they look decorative on the plate and by dressing them up with a sweet and tangy dressing, elevates their mild flavour to the next level. A sprinkling of dukkah adds a contrasting crunchy texture.

Ingredients

Grilled Zucchini Salad

arrow

4 large courgette

sliced lengthways into thick slices

arrow

sea salt

one pinch per slice of zucchini

3 Tbsp olive oil

for grilling

35g dukkah

to sprinkle on top

Honey and Vinaigrette Dressing

1 Tbsp Dijon mustard

arrow

3 Tbsp balsamic vinegar

pinch salt

grind of black pepper

100ml olive oil

2 Tbsp honey

Method

Grilled Zucchini Salad

Honey and Vinaigrette Dressing

Slice the zucchini lengthways into thick slices.

Rub each zucchini slice with olive oil and a good sprinkle of flaky sea salt on both sides.

Grill the slices over a hot grill plan until cooked through and the slices are decorated with nice grill marks.

Arrange the zucchini slices in a ribbon like way onto a serving platter, drizzle half the vinegar and honey dressing over the plate and scatter the dukkah on top.

Optional: You can also serve the dressing in a jug on the side if you prefer your guests to dress their own salad.
