Easy Avocado Salsa

Ingredients

5 medium tomatoes

1 medium red onion

chopped

1 red chilli

de-seeded and finely diced (optional)

1 garlic clove

crushed

½ cup fresh coriander

chopped

3 Tbsp olive oil

2 Tbsp lime juice

arrow

salt and freshly ground black pepper

to taste

Method

for avocado salsa

Place avocado, tomato, onion, chilli, coriander and garlic into a bowl and combine.

In a separate small bowl, mix the olive oil, salt, pepper and lime juice.

Pour mixture over the salad and toss gently to evenly coat. Serve with corn chips, over a salad or with your favourite Mexican dish.
