Super Easy Cottage Pie Packed with Vegetables
A great winter favourite with loads of nutritious ingredients, and better yet, they’re hidden from the kids!

750g Quality Mark beef mince
2 tsp olive oil
1, finely chopped onion
1, peeled carrot
1, finely chopped celery stalk
1/4 cup red wine
1/4 cup tomato sauce
2 tsp worcestershire sauce
A pinch of black pepper
1 cup mixed vegetables
1 tbsp, melted butter
2 cups mixed vegetables
1kg, peeled and chopped potato
1/2 cup milk

Preheat oven to 180ºC (160ºC fan).
Heat the oil over a medium-high heat.
Add onion, carrot and celery.
Cook for 5 to 7 minutes or until tender, stirring often.
Add mince and cook for a further 5 minutes or until mince is browned.
Stir regularly to break up the mince.
Add wine and cook for a further 4 minutes or until the liquid evaporates.
Reduce heat to medium-low.
Add tomato and Worcestershire sauces and season with pepper to taste.
Cover and simmer for 15 minutes.
Remove from heat and add frozen mixed vegetables and stir.
