This is a quick throw together salad that is fresh and colourful and goes well with barbecued lamb or beef.

Spinach, Date & Orange salad

Ingredients

Salad

3 oranges

peeled and sliced

12 Medjool dates

halved and stoned

2-4 cups baby spinach

12 olives

arrow

1 red onion

peeled and sliced

1 Tbsp fresh thyme

chopped

1 green chilli

deseeded and sliced

Dressing

1/4 cup olive oil

2 Tbsp white wine vinegar

Method

To Make Salad

Place the dates, spinach or baby salad leaves, olives, sliced red onion, thyme and chilli in a large bowl.

Season well with salt and pepper and toss.

Combine olive oil and vinegar in a jar to make the dressing and serve alongside or toss through the salad.
