Not only are these meatball skewers fun to make, you'll have dinner on the table in no time. They taste amazing with a bit of char from the barbecue, but can just as easily be popped on the grill for an easy weeknight dinner.

Ingredients

600g Quality Mark beef mince

2 eggs

beaten

1 onion

finely diced

1/2 cup fresh breadcrumbs

2 Tbsp madras curry powder

arrow

A pinch of salt

arrow

A pinch of black pepper

arrow

4 spring onions

chopped into 3cm pieces

1 red capsicum

chopped into approx. 3-4cm pieces

arrow

1 red onion

chopped into 3-4cm pieces

Yoghurt dip

arrow

200g yoghurt

Plain, unsweetened

arrow

1/4 cup mint leaves

chopped

A pinch of white sugar

1/2 cup parsley

chopped

Method

To Make Meatballs

Combine the mince, eggs, onion, curry powder, half the parsley, salt and pepper.

Shape into 3cm meatballs.

Thread onto cocktail bamboo skewers, alternating with pieces of spring onion, capsicum and onion.

Cover and chill until ready to barbecue or grill.

Mix yoghurt, mint, the remaining parsley and a little sugar to make a dip.

Cover and chill until ready to serve.

Barbecue or grill the meatballs until cooked thoroughly, about 8-10 minutes, turning a couple of times.
