Garlic Potato Hash

Ingredients

3 garlic cloves

minced

3 large potatoes

washed and diced into 2cm cubes

2 capsicum

diced

arrow

1 small onion

diced

arrow

2 Tbsp olive oil

arrow

Pinch salt and pepper

to taste

1 tsp paprika

arrow

½ tsp chilli powder

optional

arrow

handful parsley

roughly chopped

Method

for potato hash

Place the potatoes in a medium saucepan, cover with water and bring to a boil over a medium-high heat. Reduce to a simmer and cook for around 10 minutes until potatoes are tender.

Drain the potatoes and transfer to an oven tray to dry.

Heat a large skillet or fry pan over medium heat and add olive oil, onion and capsicum. Cook for 3 minutes or until they begin to soften, stirring often.

Add the potatoes, garlic, salt, pepper, paprika and chilli powder. Cook for 7-9 minutes or until the potatoes begin to brown.

Remove from the skillet and top with parsley. Serve warm.
