Nectarine Salad with Burrata and Chilli Mint Dressing

Ingredients

Salad

  • 3 nectarines, sliced
  • 3 or 4 handfuls of mixed salad leaves
  • One large burrata (if you cant find this use mozzarella)

Dressing

  • Juice of 1 lime or lemon
  • 1 chilli (finely chopped)
  • 1 handful of fresh mint (torn)
  • Splash of avocado oil
  • Splash of balsamic vinegar

Method

Salad

Arrange salad greens and sliced nectarines on a serving platter. Tear cheese and place on top. Mix all dressing ingredients together and drizzle over just prior to serving. Serve with crusty bread and your favourite beef or lamb.
