Roasted Mushrooms with Smoked Garlic and Paprika

  • 4 large cups of Swiss brown or button mushrooms
  • 1/2 cup chopped Italian parsley

Dressing

  • 4 garlic cloves, squashed and peeled
  • ½ teaspoon smoked paprika
  • 4 Tablespoons balsamic vinegar 
  • 2 Tablespoons honey
  • 2 Tablespoons olive oil
  • Cracked pepper

Method

Method 

Preheat oven to 180ºC.

In a jug mix dressing ingredients.

Put mushrooms in a bowl and pour olive oil mixture over and mix to coat.

Spray a large roasting dish with olive oil and roast mushrooms about 30 minutes turning twice.

Serve with fresh parsley.
