Tandoori Burgers

Use store-brought tndoor curry paste for more than just curries - add to meatloaf, mix with yoghurt and spread on a leg of lamb for roast. Add to mince and easily life the family burger beyond the realm of buns, lettuce, beatroot and the ubiquitous tomato sauce to the tantalising aromas and taste of India.

Ingredients

  • 600g Quality Mark lean beef mince or lamb mince
  • 1 onion, peeled and finely sliced
  • 3 tablespoons tandoori paste
  • ½ cup fresh white breadcrumbs
  • 3 tablespoons unsweetened Greek-style yoghurt
  • 2 tablespoons chopped fresh coriander

Chilli salsa

  • ½ small red onion, peeled and finely chopped
  • 1 red chilli, deseeded and finely chopped
  • 1 tablespoon chopped fresh coriander

Method

Pan fry the onion in a dash of oil until tender. Add the tandoori paste and cook stirring for 1-2 minutes until fragrant. Cool.

Mix together the cooked onion mixture, mince, breadcrumbs, yoghurt and coriander with a jolly good seasoning of salt and pepper. Use wet hands to mould into 6-7 even-sized patties.

Cook over a moderate-high heat on a greased barbecue or in a frying pan for 7-10 minutes on each side until the burgers are cooked. Cooking time will be dependent on how thick the burgers are. Alternatively cook under a grill.
Serve the burgers on warm naan bread with slices of mango or cucumber with a little Chilli Salsa and mango chutney if wished.

Stir all the ingredients together.
