Marinade

2 tbsp fish sauce

2 tbsp garlic paste

2 tbsp ginger paste

2 tbsp sweet chili sauce

2 tbsp, chopped fresh mint

Vegetables for stir-fry

1 tbsp, shredded fresh ginger

1 large, deseeded, cut into thin strips red chilli

2-3 heads, halved baby bok choy

250g shiitake mushrooms

arrow

125g snow peas

arrow

1 bunch, chopped spring onion

Dressing

4 tbsp lemon juice

arrow

2 tbsp fish sauce

arrow

1 tbsp brown sugar

arrow

1/4 cup fresh mint

arrow

1/4 cup fresh coriander

In a resealable plastic bag toss the marinade ingredients with the fillet steak.

Seal and leave to marinate for 30 minutes.
