750g Quality Mark beef mince
1/4 cup fresh breadcrumbs
3 spring onions
finely sliced
a handful of parsley
chopped
4 gherkins
finely chopped
1/2 cup tomato sauce
150g potato chip

Method
To Make Meatballs

Preheat the oven to 200ºC.

In a bowl mix together the beef mince, breadcrumbs, egg, spring onions, parsley, gherkins if using, and tomato sauce.

Season with salt and pepper if wished.

With wet hands, mould into 10 balls.

Roll in the crushed potato chips to coat.

Bake in the preheated oven for 30 minutes until cooked and the chip coating is golden.

Serve like a toffee apple, pierced with a bamboo skewer or butcher’s stick, with plenty of tomato sauce on the side.
