This is taking a steak sandwich to the next level. This dish suits being a lunch or dinner and you can choose whether to have a sandwich lid or just eat it open with a knife and fork.

500g Quality Mark beef sirloin

Caramelised onions
25g butter
3-4 onions
thinly sliced
1 Tbsp balsamic vinegar
1 Tbsp brown sugar
Mushrooms
3 garlic cloves
crushed
300g button mushrooms
sliced
1 Tbsp fresh thyme
2 cups baby spinach
1 Tbsp Dijon mustard
½ cup parsley
chopped
To serve

To make the caramelised onions, heat the butter over a medium-low heat until it froths.

Add the onions and cook, stirring frequently for about 20 minutes, until the onion is very soft.

Add the balsamic vinegar and brown sugar and cook for another 10 minutes. Season as required.

To make the mushrooms, heat a little oil in a pan over a medium-high heat.

Add the garlic, mushrooms and thyme and cook for 5-10 minutes until soft.

Add the spinach and cook for another 5 minutes until most of the moisture has been evaporated.

Stir through the mustard and parsley, and season as required.
