This is a super-quick throw-together salad that is fresh and colourful and goes well with barbecued lamb or beef.

Salad
3 oranges
12 halved and stoned pitted date
2-4 handfuls of baby spinach
12 olives
1 peeled and sliced red onion
1 tbsp chopped fresh thyme
1 deseeded and sliced green chilli
Dressing
1/4 cup olive oil
Use a flavoured olive oil like lemon or orange or an extra virgin olive oil for this recipe to add extra flavour.
2 tbsp white wine vinegar
Method
To Make Salad

Place the dates, spinach or baby salad leaves, olives, sliced red onion, thyme and chilli in a large bowl.

Season well with salt and pepper and toss.

Combine olive oil and vinegar in a jar to make the dressing and serve alongside or toss through the salad.
