4 large cups button mushrooms
1/2 cup, chopped flat-leaf parsley
4, squashed and peeled garlic cloves
1/2 tsp smoked paprika
4 tbsp balsamic vinegar
2 tbsp honey
2 tbsp olive oil
A good grind black pepper
To Roast Mushrooms
Preheat oven to 180ºC.
In a jug mix dressing ingredients.
Put mushrooms in a bowl and pour olive oil mixture over and mix to coat.
Spray a large roasting dish with olive oil and roast mushrooms about 30 minutes turning twice.
Serve with fresh parsley.
