Our Mexican-Style Mince is super versatile and can be paired with rice, tacos or wedges to name a few. For this recipe we’ve paired it with corn chips, sour cream and avocado.

Beef
500g Quality Mark beef mince

1, finely chopped onion
i
1, finely chopped carrot
i
1, finely chopped celery
i
2, finely chopped garlic cloves
1 tsp paprika
1/2 tsp chilli powder

1, deseeded and finely sliced red capsicum
i
400g can chopped tomatoes in juice
1 cup beef stock
400g, drained red kidney beans
To serve
corn chip
sour cream
cut into wedges lemon
smashed avocado
fresh coriander
Method
To Make Mince
To Serve

In a large bowl combine the beef mince, onion, carrot, celery, garlic, paprika and chilli powder.

Heat a dash of oil in a large heavy-based saucepan over medium-high heat.

Add the beef mixture and brown, stirring continuously with a wooden spoon to break up the mince.

Season with a little salt.

Reduce the heat, cover and simmer for about 40 minutes.

Remove the lid and add the red kidney beans.

Cook for a further 10 minutes.
