Ingredients
600g Quality Mark beef mince
2, beaten eggs
1, chopped onion
1/2 cup breadcrumbs
2 tbsp madras curry powder
A pinch of salt
A pinch of black pepper
4 sprigs spring onion
1 capsicum, red, sliced, frozen, pan-fried with olive oil, no salt added
1 red onion
Yoghurt dip
200g yoghurt
1/4 cup, chopped fresh mint
A pinch of white sugar
1/2 cup, chopped parsley
Method
To Make Meatballs

Combine the mince, eggs, onion, curry powder, half the parsley, salt and pepper.

Shape into 3cm meatballs.

Thread onto cocktail bamboo skewers, alternating with pieces of spring onion, capsicum and onion.

Cover and chill until ready to BBQ or grill.

Mix yoghurt, mint, the remaining parsley and a little sugar to make a dip.

Cover and chill until ready to serve.

BBQ or grill the meatballs until cooked thoroughly, about 8-10 minutes.

Serve with the yoghurt dip.
