Kids will love these quesadillas reheated the next day - double the recipe to use the whole can of baked beans. Feel free to add corn kernels, capsicum or a handful of finely chopped onion to the beef mince mixture. Add some chilli to the mince mixture if you want more spice as well.

250g Quality Mark beef mince

1 cup baked beans

drained

1 cup grated cheese

4 tortillas

20cm diameter

To Make Beef

Mix the beef mince, baked beans and cheese in a bowl.

Season with salt and freshly ground black pepper.

Divide the mixture into 4 even-sized portions.

Press beef mixture over half of each tortilla. Fold over to enclose filling.

Heat large non stick frying pan over moderate heat.

Spray tortilla lightly with oil.

Cook for 5 minutes each side until golden brown and cooked through.
