600g Quality Mark scotch fillet steaks

cut into 3-4cm cubes
1 tbsp fish sauce
1 tbsp brown sugar
3 garlic cloves
minced
1/2 tsp chilli flakes
200 ml satay sauce
store-bought or see below
Satay sauce
1 tsp garlic clove
minced
1/2 onion
finely chopped
1 red chilli
deseeded and chopped
1/2 tsp chilli flakes
1 tbsp brown sugar
2 tbsp soy sauce
1/2 cup peanut butter
1 cup coconut cream

To Make Skewers
To Make Satay Sauce

In a bowl, add the fish sauce, brown sugar, minced garlic and chilli flakes.

Add 2 tablespoons satay sauce and whisk to combine.

Add the steak pieces and stir to combine.

Cover and marinate for at least 1 hour or overnight.

Soak 8 bamboo skewers in water.

Thread marinated meat onto skewers.

Cook the skewers in a large, oiled frying pan or on the barbecue grill for 5-7 minutes total, turning to cook on all sides.

Serve with satay sauce.
