Cevapi is a grilled mince dish that is common in the Balkans. This recipe provides a street food take on the dish, serving it in flatbread with sweet red pepper sauce (ajvar). It's perfect whether you're feeding a crowd or just looking for something a little different to serve the family. This recipe has been adapted by Chef Sara Wright from one created by Jamie Oliver. Beef Cevapi
1kg Quality Mark beef mince

4 garlic cloves
2 tsp baking soda
1 tsp smoked paprika

1 large egg
150ml sparkling water
olive oil
Ajvar
6 red capsicum
2 aubergine
1 garlic bulb
1 bunch flat-leaf parsley
fresh
2 lemons
extra virgin olive oil
To serve
5-6 flat breads
based on two cevapi per flat bread

Place the mince in a large bowl along with 4 cloves of peeled and crushed garlic. Sprinkle over the baking soda, paprika, and season with salt and pepper.

Add the egg and use your hands to mix everything together. Add as much of the sparkling water as you need to make a smooth, pliable mixture.

Divide the meat into 10 to 12 pieces and roll each one into a sausage shape, about 10cm long and 2cm thick.

Place the cevapi on an oiled baking tray, cover with clingfilm and chill in the fridge until needed.
