Method
To Make Salad

Cut apricots in half and remove stone.

Halve each bocconcini and place in the centre of each apricot half.

Alternate chilli and basil as toppings and sprinkle with pistachio nuts.

Remove from the fridge 5 minutes prior to serving so they are not too cold.

We love serving as a mixed entree with our favourite beef and lamb entrees.
