Salad
3 to 4 handfuls baby spinach
1 thinly sliced red apple
1 thinly sliced green apple
A handful of roasted blanched almond
100g feta cheese
1/3 cup cranberry
Dressing
2 tbsp pomegranate balsamic vinegar
2 tbsp extra virgin olive oil
2 tbsp honey
A pinch of black pepper
Method
To Make Salad

Slice apple thinly and squeeze over lemon juice to stop browning.

On a platter layer spinach, cranberries, nuts and cheese.

Combine the dressing ingredients and pour over salad just before serving
