Ever wondered what a beef burger designed by artificial intelligence (A.I.) would taste like?
We used an A.I. tool, affectionately known as 'Flav', to come up with unique (and delicious) ingredient pairing for burgers, which were then sense-checked by chefs.
Using Flav, new ways of flavour matching that would complement each other if eaten together were discovered. Flav also helped to bring a unique New Zealand dimension to possible flavour combinations by incorporating native plants/ingredients.
The result was a Beef and Kawakawa Burger with Coffee Mayo and Cranberry Tomato Sauce!

Burger Patties
100g Quality Mark beef mince
60g pork mince
40g pork fat
0.2g cloves
0.2g ground nutmeg
1g coriander seeds
0.2g kawakawa berries
2g kawakawa
leaves
3.6g salt
0.5g black pepper
2g sugar
2g panko crumbs
Coffee Mayo
1 shot coffee
1g coffee
35g mayonnaise
Cranberry Tomato Sauce
30g extra virgin olive oil
100g red onion
100g cranberries
30g tomato paste
150g water
Burger Assembly
rocket
2 burger buns
2 slices Comte cheese
Method
For the Meat Patties

To Assemble Burger

Place the beef mince into a grinder and grind through using the 5mm plate, then repeat using a 3mm plate.

Place the pork mince into the grinder and grind through using the 2mm plate, then repeat with a 1mm plate.

Place the pork fat into the grinder and grind through using a 5mm plate.

Place the whole cloves and coriander seeds in a pan and lightly toast them. Remove from the heat, allow to cool and grind them finely using a mortal and pestle or grinder. Add to the mince meat mixture.

Grind the nutmeg using a mortal and pestle or grinder and add to the mince meat mixture.

Slice Kawakawa berries thinly, so that they are almost a mince-like texture, add to the mince meat mixture.

Finely chop the Kawakawa leaves and add to the mince meat mixture.

Place the remaining patty ingredients along with the chopped herbs into the mince meat mixture and mix together for five minutes.

Place the mixture into an airtight container and store in the fridge for 24 hours.

After 24 hours mix again for 5 minutes and portion into two patties (100g each).

Cook the patties to medium rare.

When almost cooked place a slice of cheese on each patty to gently melt.
