There is always something exciting about starting over. The New Year means a fresh start, a second chance and an injection of confidence. With a clean slate comes a transfer of power that enables you to outline your goals and get started on them without the cloud of past failures or yesterdays setbacks looming ahead.
For us here at Beef + Lamb New Zealand, 2014 was a great year and as such we’re beginning 2015 with a bang. As you may have already seen, recipes.co.nz has had a new lease on life with fresh new graphics and all the tools you need to find the perfect recipe. New Zealand beef and lamb is a staple in the kiwi kitchen and we are always developing new recipes to inspire the home cook in everyone, especially over summer where social dining and entertaining is at its peak. There is no better time to utilise the New Year’s newfound confidence and get creative and try new recipes for the family or friends.
Over the festive season I donned one of my ultimate favourite recipes, the Marinated Roast Lamb with Fresh Mint Topping
, (and it didn’t last long). I am almost certain I have posted about this recipe before but it deserves all the credit. Not only does the green in the mint make the dish look festive but it also gave the flavour a cooling and fragrant element much needed on our hot Manawatu Christmas day.
I got the prep work out of the way and marinated the lamb leg on Christmas Eve which meant I could spend less time in the kitchen and more with the cousins. It turned out to be a blessing because allowing it to marinate for longer meant there was a subtle infusion present in the meat the whole way through. Presenting that lamb leg was a proud moment, it felt good, it looked good and it tasted even better. I had hoped leftovers for Boxing Day lunch would be on the cards but I guess I have to take that as a compliment!
