I cook for myself most evenings and some nights I find it hard to dream up an interesting dinner - for-one. I usually alternate between classic ‘family meals’ like spaghetti bolognese (with an abundance of leftovers) and simple meals consisting of roast veggies and whatever else I can throw on my plate.
Last night, I wanted to make my spring onion pesto recipe – a creation from last summer when I accidentally became a very proficient spring onion farmer! I was in one of those moods when you just can’t think of what you want to eat and so I opened recipes.co.nz in my browser and typed “pesto” into the search bar.
I had leg steaks in the fridge and so our Lamb Steaks with Chilli Pesto and Roasted Vegetables
seemed to be the perfect choice. I walked up the road to my local supermarket (a 3.2km round trip) and bought the few ingredients I needed for my homemade pesto. Doesn’t daylight savings make healthier habits, like walking instead of driving, that much easier?
I whipped up the pesto, roasted a kumara and followed the recipe instructions to cook the lamb perfectly.
