​WHEN IS A RECIPE NOT A RECIPE?

In my kitchen a recipe is not a recipe when you can substitute some of the ingredients for what you have on hand or what is on special at the supermarket and still produce a delicious nourishing meal. Well that’s what I did the other day when I got my hands on the brand new winter edition of mEAT Magazine.  

The recipe on page one jumped out at me as I fancied an easy ‘one-pot’, mid-week meal to feed the family. So, off I went to the supermarket to get some diced lamb shoulder which the recipe called for, however the beef cabinet grabbed my attention first with their ‘cross-cut blade steak special’ and in a split second my lamb with winter roots and Israeli couscous became beef with winter roots and Israeli couscous.    
 
Everything else remained the same and home I went to get on with the chopping, dicing, browning and into the oven it went. After a quick clean-up of the kitchen, I settled in front of the fire with a glass of wine and enjoyed the aroma for the next couple of hours while my one-pot dinner slowly turned into a hearty, tasty meal which went down beautifully with the Isaraeli couscous and some freshly steamed broccoli.

So, don’t be afraid to substitute beef for lamb or lamb for beef and put a new twist on your favourite recipe.... and don’t forget to tell us all about it too!
