Vanessa's Roasted Lamb Racks

Serves 4


Ingredients

  • 2 large lamb racks
  • 3 cloves of garlic
  • 3 large T of wholegrain mustard, orange zest and juice of an orange
  • Couple of sprigs of fresh rosemary
  • Cranberry sauce
  • Freshly ground black pepper


Method:

Crush garlic and zest orange mix this with mustard add salt and black pepper. Interlock lamb racks and put mustard mixture on the meat. Place rosemary sprigs on top. Place in oven (200 C). Roast for 20-25 minutes (depending on how you like your lamb). Gently cover lamb with tinfoil when it comes out of the oven and let it rest for 5-10 minutes. Heat cranberry sauce in microwave and add orange juice.

To Serve: Serve with roasted veges or kumara mash. Yummy!
