Serves 4-6
Suitable for toddlers
Preparation Time: 10 minutes
Cooking Time: 30 minutes
Ingredients
Basic Mince Mixture
- 1 Tbsp oil
- 1 onion, peeled and chopped
- 500g lean beef or lamb mince
- 2 Tbsp tomato purée
- 400g can tomatoes in juice
- 1 tsp mixed herbs or 1 Tbsp chopped fresh herbs (optional)
- 420g can baked beans
- 10-12 Taco shells
- 1 cup grated cheese
Method
Heat the oil in a frying pan, and cook the onion gently for 5-6 minutes, until tender. Add the mince, breaking up with the back of a spoon to form small pieces until cooked thoroughly and no longer pink. Stir in tomato purée, canned tomatoes and herbs. Bring to the boil and simmer gently for 30 minutes until reduced and thick, but still moist.
Add a 420g can of baked beans to the cooked mince mixture and fill warmed taco shells topped with grated cheese. Serve with salad, or your favourite vegetables.
KIDS LOVE MINCE
For children aged 1-13 years, a 100g serving of lean beef or lamb mince provides at least 20% of the average recommended daily intake of iron.
