Everyone has their favourite burger, so it’s important to have plenty of toppings available for everyone to make their own combination. These two recipes give you solutions for delicious, flavoursome patties. Use top-quality ingredients, flavour well and grill on a very hot barbecue or in a hot pan for best results. We served these on split white burger buns, ciabatta rolls and pita bread.But the choice is yours.

Ingredients

Beef Burger

  • 500g Quality Mark beef mince
  • ½ red onion, finely chopped
  • 2 teaspoons Worcestershire sauce
  • 1 tablespoon tomato sauce
  • 1 cup fresh breadcrumbs
  • handful fresh herbs, chopped
  • 2 teaspoons grainy mustard

Lamb and Spinach Burger

  • 400g lamb mince
  • 40g pine nuts
  • 40g fresh spinach
  • handful fresh herbs, chopped

Suggested fillings

  • Wholegrain or American mustard
  • Tomato sauce
  • Sliced gherkins
  • Pineapple rings
  • Sliced beetroot
  • Your favourite chutney
  • Pickled vegetables
  • Sliced cheese: Cheddar, Gruyère, Blue, Feta
  • Coleslaw
  • Lettuce or rocket leaves
  • Tomatoes

Method

In a large bowl, gently mix together the ingredients for your chosen burger. Season with salt and pepper to taste. Shape into patties of similar size and thickness (about 2 cm thickness). Dust lightly with flour to prevent sticking. Cook on a very hot grill for 8–10 minutes, turning once halfway through cooking time. For a cheese topping, add a thin slice to the top of a patty during the last minutes of grilling. Serve on toasted buns, with all your favourite fillings.

the recipe says a handful of fresh herbs, like what herbs?

Anything...e.g., thyme and parsley, or rosemary, or basil. Just whatever you have, I imagine. Just google what herbs go well with beef, if you really can't think of anything.
