Serves 4

Ingredients

Lamb Navarin
  • 700g mutton leg chops (or 500g meat)
  • 1 T butter
  • 1 T sesame oil
  • 3 pickling onions, quartered
  • 1 tsp crushed garlic
  • 1 small kumara, cubed
  • 1 carrot, sliced
  • 1 zucchini, sliced
  • 2 T flour
  • ½ 400g tin of tomatoes plus half the juice, plus ¼ c extra juice
  • ½ c chicken stock
  • ¼ c frozen beans
  • 1 dessert spoon seeded mustard
  • ground pepper

Method

Heat butter and oil in cast iron casserole dish. Cook meat in batches until browned and drain on paper towels. Add onions, garlic, carrot, kumara, zucchini and beans, cook until glossy. Add flour and stir to coat. Add roughly chopped tomatoes, juice, stock, mustard and pepper. Stir until sauce thickens. Add meat. Bake for 1 ½ hours @ 170degC.

To Serve

Serve with mashed potato and steamed broccoli.
