Mexican Mince Tortillas

Enjoy this spicy Mexican treat with reduced salt and saturated fat thanks to some tasty Tick products.


Ingredients

  • 300g Quality Mark Premium Beef Mince
  • 3 Tablespoons Azalea Grapeseed oil
  • 1 teaspoon Crushed garlic
  • ¼ Onion, peeled & finely diced
  • 2 Tablespoons Chilli powder (or according to taste)
  • 1 Tablespoon Dried oregano
  • 1 teaspoon Cumin seeds
  • ½ teaspoon Ground coriander
  • ½ teaspoon Ground cinnamon
  • 1 teaspoon Cayenne pepper
  • ¼ teaspoon Ground allspice
  • 1 Tablespoon Tomato paste
  • 1 can Watties No Added Salt Whole Peeled Tomatoes, chopped
  • 1 can Craig’s Red Kidney Beans, drained
  • 8 large Spinach leaves, shredded
  • 4 Fresh Tortillas, warmed for 15 seconds in the microwave

To Serve:

  • Country Goodness Cottage Cheese
  • LeaderBrand Fresh Mesclun Salad



Method

Heat the grapeseed oil in a sauté pan. Cook the garlic and onion until light and golden. Add the spices and cook until aromatic - approximately 2 minutes. Add the mince and cook until all the moisture has nearly evaporated (about 5 minutes). Mix in the tomato paste, chopped whole peeled tomatoes and red kidney beans. Continue to cook for a further 4 minutes.


To serve

Place a row of shredded spinach on each tortilla and add some of the mince filling on top. Start to roll the tortilla, then fold in the sides and continue to roll into a tight roll. Top each tortilla with some Country Goodness Cottage Cheese and serve with a side salad of LeaderBrand Fresh Mesclun Salad.
