Jason's Lamb Meatballs on Rice

Serves 4

  • Ingredients

  • 1kg Lamb Mince (can be substituted with beef Mince)
  • Hand full of fresh Flat leave parsley (cut finely)
  • Hand full of fresh Basil (cut finely)
  • Hand full of fresh Thyme (leaves only)
  • 1 Carrot
  • 1 red Onion
  • 2  Tablespoons Tomatoe paste
  • 1 Chili (cut finely) (I perfer Habanero)
  • 2 tined diced tomatoes
  • 1 egg
  • Small amount of oil for frypan
  • Basmati Rice

Method

  • Combine Mince, parsley, basil, ½ the carrot, onions, Chili & egg in a bowl.
  • Roll mixture in golf ball size.
  • Place balls in to fridge for ½ hr until mixture to set.
  • Heat large frypan with oil on high until nice and hot.
  •  Put rice on to cook.
  •  Turn heat down to medium.
  • Put balls into frypan and cook balls until brown.
  • Add tin(s) diced tomatoes and rest of carrot.
  • Simmer meatballs and diced tomatoes until the rice is cooked.
  • Add Slat and peper to taste.

To Serve

Place on cooked rice.

I belive this is a lovely dish with a great combination of flavours
