Beef Stir-fry

The Iron Maidens show us how to make a simple, but delicious, beef stir-fry 

Serves 4


Ingredients

  • 500g lean beef (schnitzel or rump), cut across the grain into thin strips
  • Dash oil
  • 2 tsp minced garlic
  • 1 tsp minced ginger
  • 1 onion, peeled and thinly sliced
  • 2 cups of your favourite prepared vegetables, eg capsicums, mushrooms, corn, broccoli
  • 2 spring onions, finely sliced (optional)
  • 100g mung bean sprouts (optional)
  • 2 Tbsp sweet chilli sauce

Method

Heat the oil in a frying pan or wok and brown the beef in 2-3 batches over a high heat. Do not overcook.

Remove from the pan and cook the garlic, ginger and onion for 1-2 minutes. Add the vegetables and stir-fry until crisp and tender.

Return the beef to the pan with the spring onions and bean sprouts if using, and add the sweet chilli sauce.

Toss well until hot through and serve with noodles or rice.

This recipe makes a low fat meal as it uses lean beef and just a dash of oil. The beef also provides iron and zinc, with this quick method of cooking ensuring the vegetables retain a high amount of their vitamins. So delicious and nutritious!
